Paleo Apple Pie

Who doesn’t like Paleo Apple Pie?  Well, this is something special in my opinion.  I can’t wait for you to try this recipe because the flavor takes me back to my grandmas house.  The recipe is easy to follow and the result couldn’t be more spectacular.  We start with the crust that comes together pretty quickly with 10 minutes in the oven to get it going.  In this recipe I used 8 inch square baking pan with some parchment paper and pressed the crust batter down into the pan with my fingers.

What really helps me speed through baking this recipe is my KitchenAid Mixer.  I use a special attachment that can peel, core and slice all in one operation.  I highly recommend this item if you can swing it.  Also a mandoline or regular knife will work just fine.  If you’re using a knife, just try to keep the apple slices to around 1/8 of an inch thick.  Now that I have a KitchenAid I’m not sure what I would do with out it since it can do all these neat little things that help speed up my cooking process.

After the crust comes out of the over for the first time (you bake for 10 minutes) and its cooled for a few minutes, you just need to construct it.  I like to layer my apple slices in a systematic fashion.  When you start layering, its just important to make sure you to cover the crust layer with an even distribution (as possible).  When I add the crumb top I just use my fingers to ball up the mixture.  Once the apples are covered with that crumb topping take a look at the bowl that was used to make the apple filling.  If there is any juice left over drizzle that over the crumb topping!  Don’t waste it.

The Paleo Apple Pie takes about 25 to 30 minutes to bake.  Just keep an eye on the crust.  When the crumb top starts to brown then you can pull it out.  Make sure you let the pie rest for about 10 minutes to allow it to firm up.  Or just dump some paleo friendly ice cream on top and enjoy.  Do what makes you happy.  When all is said and done, you should have something like this.

I usually make this Paleo Apple Pie when I’m going to have guests over.  I love it when I walk into a house and I can smell apples and cinnamon.  There’s just something so inviting about that.  For our friends and family that aren’t on the Paleo diet, they will have no idea.  Our Vegan friends can also enjoy.  It took me a while to get the flavor right on this one.  I wanted to get that taste that reminded me of my childhood at my grandmothers house.  For me, this one does it.

The Best Apple Pie with Crumb Top that's Paleo and Vegan friendly.  A delicate, but firm, cinnamon crust layered with Galla apples with a crunchy sweet crumble topping.  This Apple Pie will just melt in your mouth.

Instructions

  • Preheat oven to 350

Crust

  • Mix all the dry crust ingredients together to ensure they're well combined.  
  • Mix the liquid ingredients separately until well combined.
  • Add the wet ingredients to the dry and combine until the mixture becomes sticky.
  • Line a 8 inch square baking pan with some parchment paper and press the crust batter into the bottom of the pan.
  • Bake in the over for about 10 minutes.  You'll notice when you pull the crust out of the oven that it had risen and is soft to the touch.  Let rest for a few minutes when you remove from the over.
  • While the crust is baking work on the Filling and Crumb Top.

Filling

  • Thinly slice 3 apples.  You can use a knife, mandolin or this Kitchenaid mixer attachment.
  • In a small bowl, mix together all the ingredients except for the apples.
  • Add sliced apples to a large bowl and pour over the apple filling mixture until the apples are well coated.  Set aside

Crumb Top

  • Mix all the dry crumb top ingredients together to ensure they're well combined.
  • Mix the liquid ingredients separately until well combined.
  • Add the wet ingredients to the dry and combine.  You should be able to crumb up the mixture with a fork or your hands.

Construct the Apple Pie

  • When the crust has been removed from the over and it has rested for a few minutes you can construct the apple pie.
  • Layer the apples on top of the crust.  Start from one end then go to the other.  Keep layering until you run out of apple slices.  If there is any liquid in the bottom of the apple filing mixture bowl you can reserve it for now.
  • Using your fingers, flake or ball up the crumb top mixture and cover apples.  You can then use the reserve mixture and drizzle over the top, if any.
  • Bake for 25 to 30 minutes until the crumb top begins to brown.
  • Let rest for about 10 minutes and enjoy.
